Yeast Type Belgium Waffle: Soft and sweet treats !

 The last item on the new year hamper ^^, I'm so happy that I can find enough time to type this, haha. 

Yeast Type Belgium Waffle 
I have 2 Belgium Waffle recipes in my blog now, the other one is Easy Belgium Waffle, for that one you don't need to knead or wait for the dough to rise. They are both delicious, but slightly different in texture and smell. 
I put in my hamper, because I think that it will be good to serve it as a breakfast, with a cup of tea or coffee, a sweetness of this little bread gets along very with some bitter taste.
I remember the time that I started baking (don't ask me when, haha, it's a long time ago^^), Belgium Waffle was one of the top list that I wanted to make, and this recipe is the one. It's very easy. If you imagine at that time I didn't know anything about bread making and be able to make this and it's delicious too. I was so happy with this recipe, and I hope that you will happy with this as much as me.

Yeast Type Belgium Waffle 
Make 10-12
150g .................................... Bread flour
.............................................. A pinch of salt

1½ tbsp .............................. Sugar
2tsp ..................................... Instant yeast
1 ........................................... Egg
50ml .................................... Milk
70g ....................................... Unsalted butter, cut into small pieces
50g ....................................... Pearl sugar




Mix the milk and egg together, set aside.
Put the bread flour, yeast and sugar in a bowl, whisk to combine, add and salt whisk again. Pour the liquids mixture into the bowl.


Use large spoon (or pastry scraper) to mix everything together, and knead briefly to bring all the ingredients together.
Take the dough out of the bowl and knead.


Knead by using the heel of your hands to compress and push the dough away from you, then fold it back over itself (see the picture here). Until all the dough are moisten.

Add the soften butter, give the dough a little turn and repeat. Put the weight of your body into the motion and get into a rhythm. Keep folding over and compressing the dough.


Knead for 10-15 minutes or until the dough is soft, pliable, the dough will stop sticking to your hand, but it wan't be smooth.


Cover the bowl with a tea towel and leave the dough to prove for about 30 minutes.

 Mix in the pearl sugar and fold to combine.
Cut into 30g per piece, and let the dough rise for 30 minutes.



Heat the waffle pan and put the dough into the pan. Close and cook as per manufacturer's instructions until golden brown, about 2 to 3 minutes. Serve immediately.

  1. Looks yummy! Would like to try it but don't know where to buy pearl sugar. Can I substitute it with other kind of sugar or just plain sugar?

  2. You can use cube sugar, just cut it into small pieces before adding into the dough.

    1. เป็นน้ำตาลที่ละลายช้าแม้โดนความร้อนค่ะ ปุ๊กเคยลองใช้อย่างอื่น พวก น้ำตาลทรายเม็ดใหญ่ก็พอได้นะคะ
