Choco Peanut cookies: Best of both in one piece



I love to have some cookie in the kitchen, it's the best small treat that give you comfort.

There are a load of cookie recipes, but my favourites are chocolate and peanut butter. So this time, rather than making chocolate or peanut butter, I put both of them into 1 cookie instead, haha. 
Just make each of the cookie dough, brownie chocolate chip cookie and peanut butter cookie, and press them together before baking, and you get best of both in one piece.
The trick that you have to remember is when shaping the cookie, dampen you hand a bit will prevent the dough to stick to your hand, it makes your life easier. 
I bake mine for 13 minutes but it depends on your oven, as long as you love the results (the texture of the cookie that you want) you can use more or less time. 
If you want it to be drier and firmer, let it cool completely before bake them in 150C oven again for 10-15 minutes.



 Choco Peanut cookies
Make 25-30 pieces


Brownie dough
100g ...................... Unsalted butter
115g ....................... Brown sugar
................................. Pinch of salt
100g ....................... Dark chocolate (I use 57%)
1 .............................. Egg
160g ....................... All purpose flour
1/4tsp ..................... Baking soda
2tbsp ...................... Cocoa powder
140g ....................... Chocolate chips

Peanut butter cookie dough
100g ...................... Unsalted butter
115g ....................... Brown sugar
................................. Pinch of salt
120g ........................ Crunchy peanut butter
1/2tsp ...................... Vanilla extract
1 .............................. Egg
140g ....................... All purpose flour
1/4tsp ..................... Baking soda
120g ....................... White chocolate chips (or chopped)



Make Brownie dough
Put the butter into a bowl and beat until soften.
Add brown sugar and pinch of salt and beat to combine.
Melt the chocolate in the microwave for 1.30-2 minutes (low power) and stir until fully melt.
Pour into the bowl, beat to combine.
Add the egg, beat to combine.
Sift the flour and baking soda into the bowl add the cocoa powder and chocolate chips.
Fold to combine.
Cover and refrigerate for 30 minutes.

Make Peanut butter cookie dough
Put the butter into a bowl and beat until soften.
Add brown sugar and pinch of salt and beat to combine.
Put the peanut butter into the bowl, beat to combine.
Pour vanilla extract into the bowl, beat to combine.
Add the egg, beat to combine.
Sift the flour and baking soda into the bowl with white chocolate chips.
Fold to combine.
Cover and freeze for 20 minutes.

Shaping:
Line the baking sheets with baking paper or silpat.
Dampen your hand with water (this will prevent the dough to stick to your hand).
Take about 1 level tbsp of peanut butter cookie dough and roll into small log.
Do the same with brownie dough.
Press both of the dough together and roll into a ball.
Press onto the prepared baking sheet to form a 5cm disc.
Repeat with remaining mixtures.
Refrigerate for 20 minutes before baking.

Preheat the oven to 180C.
Bake for 12-15 minutes until light golden and just firm to touch.
Let the cookies cool completely on the baking sheet.
