Omelette Rice (オムライス): Fried rice with omelette

 I love egg, actually I think it's one of the most delicious and amazing food on earth ^^.


You can turn it into sweet or savoury food, and it's one of the most important ingredient in baking too. So, when someone ask me for the Omelette Rice recipe (オムライス) ( Fried rice with omelette) I'm really happy to share it.
Omelette Rice (オムライス) is a basic menu in Japan, butter rich ketchup fried rice with soft and fluffy omelette, it's many people favourite. Actually it's not hard to make, but the key is how to make it beautiful ^^ . You can cover the fried rice in the pan but I found it hard for some people to do it, and the heat from the pan will continue to cook the egg (I want it to be creamy), so this method will solve the problem. Just flip the omelette (with rice) into a plate, and shape it with 2 pieces of paper towel, Voila! you get beautiful Omelette Rice (オムライス). 
My recipe for the fried rice is just a suggestion, you can make it the way you like, well it's your Omelette rice anyway, haha!



 Omelette Rice (オムライス): Fried rice with omelette
Serve 2 


Fried rice
175g ............................ Chicken, cut into small pieces
35g .............................. Butter
70g .............................. Onion, chopped
45g .............................. Carrot, cut into small dices
30g .............................. Mushroom, cut into small pieces
250g ............................ Cooked rice
50g .............................. Ketchup
1tsp .............................. Shoyu (Japanese soy sauce)
...................................... Salt (to taste)

Omelette
2tbsp ............................ Rice bran oil
6 ................................... Eggs
2tbsp ............................. Whipping cream (or milk)
....................................... Salt and pepper

To serve 
....................................... Ketchup




 Mix chicken pieces with a pinch of salt and set aside.


 Place a pan over low heat, put the butter into the pan.
When the butter melt, put the onion pieces into the pan, and cook until golden.


 Put carrot into the pan and cook until slightly soften, add the chicken pieces, and cook until almost done.
Add the mushroom, shoyu, and cook until done.


 Add cooked rice with the ketchup, and stir until fully combine.
Season with salt.
Remove from the heat, and set aside while preparing the omelette.


 Make omelette, 1 dish at a time.
Mix 3 eggs with 1 tbsp of whipping cream (or milk), and season with salt and pepper.


 Place the pan over medium heat, pour the oil into the pan.
Use a paper towel to spread the oil over the pan.
When the pan become hot, pour the egg mixture into the pan.
Stir with chopstick and cook until start to set. then lower the heat.


 Place the fried rice over the omelette and turn of the heat.
Fold both side of the omelette to cover the fried rice.


 Place a plate over the pan and flip the pan.


 Use 2 pieces of paper towel to press the omelette to shape it.


 Start from the end of the omelette.


Now, you get beautiful omelette rice!
